Salted chocolate tart

This tart: Very chocolaty, fudgy. Think ganache, but creamier.


Time: 45 minutes to make + chill overnight

Serves: 10 people



Ingredients

for the base

  • 18-20 oreos

  • Butter, 50 g

  • Milk chocolate, 25 g

for the filling

  • Heavy cream, 200 g

  • Milk chocolate, 125 g

  • Dark chocolate, 75 g

  • Butter, 50 g

  • Sugar, 50 g

  • Cocoa powder, 30 g

  • 1 tsp instant coffee

  • 1 tsp vanilla extract

  • A pinch of salt

  • Milk, 50 g

  • Corn starch, 20 g


I used a 20 cm tart pan with a removable bottom. If yours doesn’t have removable bottom (or if you’re not using a tart pan), line your pan or dish with parchment paper.

Method

to make the base

  1. Crush oreos until very fine. I used a small food processor.

  2. Melt the butter and milk chocolate and mix thoroughly with the oreo crumbs.

  3. Press this mixture firmly into the bottom and sides of your tart pan.

  4. Refrigerate while making the filling.

to make the filling

  1. In a small bowl, whisk together the corn starch and milk, set this aside.

  2. In a sauce pan, add the heavy cream, milk chocolate, dark chocolate, butter, sugar, cocoa powder, instant coffee, vanilla and salt.

  3. Cook on low-medium heat whilst stirring with a spatula until everything is melted and combined.

  4. Add in the milk and cornflour slurry (make sure to whisk it again before adding it in) and cook on medium-high heat for about 5-7 minutes while stirring with a spatula (make sure the bottom doesn’t stick. You don’t want to boil this mixture, but cook it until it’s thoroughly warm and until you can see streaks of steam.

  5. This is optional, but you can strain the filling after removing from the stove.

  6. Let the filling cool on the counter for about 10 to 15 minutes, stirring every other minute, then pour it into the base and refrigerate for 5-6 hours and preferably overnight.

  7. To slice the cake, i like to dip my knife in very hot water for a couple of seconds, dry it with a paper towel and slice. I do this between every slice. It’s a bit tedious, but results in sharp and beautiful slices. As a bonus, it melts the sides of each slice, making them look extra glossy.

  8. Add flaky salt or salt granules before serving.
